Ingredients

  • 1 cup cornmeal
  • ½ cup milk (whole or skim), plus 2 tablespoons
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon aniseed
  • 1 teaspoon sugar (white, granulated)
  • 1 cup oil (for frying)

Method
 

Instructions:
  1. In a large mixing bowl, combine the cornmeal, milk, eggs, salt, aniseed, and sugar. Use a whisk or fork to mix until you achieve a smooth batter. It should be thick but pourable. If it seems too thick, add a little more milk, one tablespoon at a time.
  2. In a frying pan or deep skillet, pour in the oil and heat it over medium-high heat. To test if the oil is ready, drop a small spoonful of batter into the oil; it should sizzle and rise to the surface.
  3. Using a spoon or small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil. Fry them in batches to avoid overcrowding the pan. Cook for about 2-3 minutes on each side, or until they turn golden brown.
  4. Once cooked, use a slotted spoon to remove the fritters from the oil and place them on a plate lined with paper towels. This will help absorb any excess oil.
  5. Serve your Arepitas de Maiz warm, either on their own or with your favorite dipping sauce. Enjoy the crispy, flavorful bites that are sure to impress!
