Ingredients
  

For the Biscuits:
  • 2 packages instant or active yeast
  • 4 tablespoons warm water (110-115 degrees)
  • 5 cups all-purpose flour
  • ½ cup sugar
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup cold butter (cut into small cubes)
  • 1 cup heavy cream
  • 1 cup buttermilk

Method
 

Instructions:
  1. In a small bowl, dissolve the yeast in the warm water. Let it sit for about 5 to 10 minutes until it becomes frothy.
  2. In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, and baking soda.
  3. Add the cold butter cubes to the flour mixture and cut in the butter until the mixture resembles coarse crumbs.
  4. Pour in the heavy cream, buttermilk, and activated yeast mixture and gently stir until just combined.
  5. Cover the dough with plastic wrap and refrigerate for at least 1 hour, or up to overnight.
  6. Preheat your oven to 425°F (220°C).
  7. Roll out the chilled dough to about ½-inch thickness and cut out rounds, placing them on a greased baking sheet.
  8. Bake for about 12-15 minutes or until golden brown. Brush with melted butter if desired.
  9. Let the biscuits cool slightly before serving. Enjoy warm with butter, jam, or honey.
