Ingredients

  • 2-3/4 cups all-purpose flour (12.4 oz)
  • 1 cup unsalted butter (cubed, at room temperature)
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 hard-boiled eggs (chopped)
  • 1-1/2 tsp vanilla extract
  • 1 (12-oz) package semi-sweet chocolate chips
  • 3/4 cup toffee bits

Equipment

  • Mixing bowls
  • Electric mixer
  • Measuring cups and spoons
  • Baking Sheets
  • Parchment paper
  • Cooling rack

Method

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, combine the cubed unsalted butter, granulated sugar, and brown sugar. Using an electric mixer, beat them together until the mixture is light and fluffy, about 2-3 minutes.
  3. Next, add the chopped hard-boiled eggs and vanilla extract to the butter and sugar mixture. Mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, salt, and baking soda. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  5. Gently fold in the semi-sweet chocolate chips and toffee bits, ensuring they are evenly distributed throughout the cookie dough.
  6. Using a cookie scoop or tablespoon, scoop out portions of the dough and place them onto the prepared baking sheets, leaving some space between each cookie.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers look slightly underbaked. They will continue to cook while cooling.
  8. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a cooling rack. Once cooled, enjoy your Amazing Hard Boiled Egg Chocolate Chip Cookies with a glass of milk or your favorite beverage!

Notes

  • Ensure your hard-boiled eggs are well-chopped for even distribution in the cookie dough.
  • For an extra touch, sprinkle a little sea salt on top of the cookies before baking.
  • Let the cookies cool completely for the best texture; they will firm up as they cool.
  • If you prefer a thicker cookie, chill the dough for 30 minutes before baking.
