  • 1/4 cup almond paste (about 4 oz)
  • 2 eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 oz semisweet or bittersweet chocolate chips (good quality)
  • 1/2 cup slivered almonds (lightly toasted)

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and almond paste until light and fluffy, about 2-3 minutes.
  3. Step 3: Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Step 4: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
  5. Step 5: Fold in the chocolate chips and toasted slivered almonds until evenly distributed.
  6. Step 6: Drop rounded balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart. Bake for 10-12 minutes.
  7. Step 7: Let the cookies cool on the baking sheet for about 5 minutes before transferring to a cooling rack.
