Ingredients
  

  • 3 large egg whites
  • 1 teaspoon salt
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • ¾ cup granulated sugar
  • 2 cups almond flour
  • 1 cup confectioners' sugar for rolling

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, whisk the egg whites until frothy and soft peaks form.
  4. In a separate bowl, mix together the almond flour, granulated sugar, and salt.
  5. Add the almond extract and vanilla extract to the egg whites, then gently fold in the dry mixture until just combined.
  6. Using a cookie scoop, drop rounded tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Roll each dough ball in the confectioners' sugar until well coated.
  8. Bake for about 15-18 minutes, or until the edges are lightly golden.
  9. Let the cookies sit on the baking sheet for a few minutes before transferring them to a cooling rack.

Notes

  • Ensure egg whites are free from yolk for proper whipping.
  • Bake longer for crunchier cookies, but watch closely.
  • Store in an airtight container for up to a week.
