Add the almond extract and vanilla extract to the egg whites, then gently fold in the dry mixture until just combined.
Using a cookie scoop, drop rounded tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
Roll each dough ball in the confectioners' sugar until well coated.
Bake for about 15-18 minutes, or until the edges are lightly golden.
Let the cookies sit on the baking sheet for a few minutes before transferring them to a cooling rack.
