Ingredients
  

  • 180 g almond flour
  • 220 g powdered sugar plus extra for dusting
  • 4 tablespoons cocoa powder
  • 60 g egg whites approximately the egg whites from 2 large eggs

Method
 

  1. Preheat your oven to 175°C (350°F).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, sift together the almond flour, powdered sugar, and cocoa powder.
  4. In a separate bowl, whisk the egg whites until frothy.
  5. Add the frothy egg whites to the dry ingredients and mix until a thick dough forms.
  6. Using a tablespoon or cookie scoop, portion out the dough and place it on the prepared baking sheet.
  7. Bake for 12-15 minutes, or until the edges are set and the tops look slightly cracked.
  8. Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely. Dust with additional powdered sugar before serving.

Notes

  • Experiment with flavors by adding extracts like almond or vanilla.
  • The dough can be refrigerated for up to 3 days before baking.
  • For a richer flavor, use dark cocoa powder.
