Ingredients
  

  • 4 large eggs
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • 1/4 cup low-fat cheese shredded
  • Nonstick cooking spray

Method
 

Preparation
  1. Gather all your ingredients. Dice the bell peppers and chop the spinach finely. Grate the low-fat cheese if you haven't done so already.
  2. In a mixing bowl, crack the four large eggs. Season with salt and black pepper to your taste. Beat the eggs until they are well blended and slightly frothy.
  3. Fold in the diced bell peppers, chopped spinach, and shredded cheese into the beaten eggs. Mix gently until evenly distributed.
  4. Preheat your air fryer to 320°F (160°C) for about 3 minutes. Spray the air fryer basket with nonstick cooking spray.
  5. Carefully pour the egg mixture into the prepared air fryer basket. Cook for approximately 10-12 minutes, checking for doneness around the 10-minute mark.
  6. Once cooked, gently remove the omelet from the air fryer using a spatula. Serve hot, garnished with additional herbs or a side of fresh fruit.

Notes

  • Feel free to experiment with different vegetables and cheeses.
  • This recipe is great for meal prep; double it and save half for later!
  • If freezing, wrap tightly and reheat in the air fryer.
