Ingredients
  

  • 1 pound fingerling potatoes firm and smooth
  • 1 tablespoon olive oil extra virgin recommended
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley or fresh herbs
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground recommended

Method
 

  1. Start by washing your fingerling potatoes thoroughly to remove any dirt and debris. Slice each potato in half lengthwise.
  2. In a mixing bowl, combine the halved fingerling potatoes with olive oil, garlic powder, dried parsley, salt, and black pepper. Toss well until evenly coated.
  3. Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure even cooking.
  4. Place the seasoned fingerling potatoes in a single layer in the air fryer basket. Cook for 15-20 minutes, shaking the basket halfway through.
  5. Check for doneness; the potatoes should be golden brown and crispy. If needed, continue cooking in 2-3 minute increments.
  6. Carefully remove the fingerling potatoes from the air fryer and serve hot. Garnish with herbs or parmesan cheese if desired.

Notes

  • Soak potatoes in water for 30 minutes before cooking for extra crispiness.
  • Adjust seasonings to your taste; add more garlic powder if desired.
  • Store leftovers in an airtight container in the fridge for up to three days.
