Ingredients
  

For the Chicken Cutlets:
  • 28 oz boneless skinless chicken breasts trimmed
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/4 cup Italian dressing
  • 3/4 cup seasoned whole wheat breadcrumbs homemade or store-bought
  • 2 tablespoons grated Parmesan cheese or Romano cheese
  • 1 teaspoon dry Italian seasoning
  • 1 large egg beaten
  • Olive oil spray

Method
 

Instructions:
  1. Start by trimming any excess fat from the chicken breasts. Place them between two sheets of plastic wrap and gently pound them to an even thickness of about 1/2 inch. This ensures they cook evenly.
  2. In a small bowl, combine the kosher salt and garlic powder. Rub this seasoning mixture over both sides of the chicken cutlets for maximum flavor.
  3. Place the seasoned chicken cutlets in a shallow dish and pour the Italian dressing over them. Let them marinate for at least 15 minutes; this adds flavor and moisture.
  4. In one shallow bowl, place the beaten egg. In another bowl, mix together the seasoned whole wheat breadcrumbs, grated Parmesan cheese, and dry Italian seasoning.
  5. Dip each marinated chicken cutlet first in the egg, allowing any excess to drip off, and then coat it in the breadcrumb mixture, pressing gently to adhere.
  6. Preheat your air fryer to 400°F (200°C) for about 5 minutes. This will help achieve that crispy exterior.
  7. Lightly spray the air fryer basket with olive oil spray. Place the breaded chicken cutlets in the basket in a single layer, ensuring they do not touch. Spray the tops with a little more olive oil.
  8. Air fry the chicken cutlets for 10-12 minutes, flipping them halfway through. They should be golden brown and reach an internal temperature of 165°F (74°C).
