- Start by pitting the dates if they aren’t already. This will ensure a smooth blend.
- In a food processor, combine the pitted dates and peanut butter. Pulse until the mixture is well combined and smooth.
- Transfer the date and peanut butter mixture into a mixing bowl. Add in the old-fashioned rolled oats and stir until everything is well incorporated.
- Line your 9x9-inch baking dish with parchment paper, allowing some overhang on the sides.
- Using a spatula, spread the mixture evenly into the lined baking dish. Press it down firmly to ensure it holds together when cut.
- Place the baking dish in the refrigerator for at least one hour to allow the bars to set.
- Once set, remove the bars from the baking dish using the parchment paper overhang. Cut into squares or rectangles.

- Store bars in an airtight container in the fridge for up to one week.
- For longer storage, freeze individual bars wrapped in parchment paper.
- Consider adding chocolate chips or spices for extra flavor.
