Ingredients

For the Bars:
  • 1.5 cups dates pitted
  • 0.5 cup peanut butter creamy or crunchy
  • 0.5 cup old-fashioned rolled oats

Equipment

  • Food processor
  • Mixing bowl
  • 9x9-inch baking dish
  • Parchment paper
  • Spatula

Method

Method:
  1. Start by pitting the dates if they aren’t already. This will ensure a smooth blend.
  2. In a food processor, combine the pitted dates and peanut butter. Pulse until the mixture is well combined and smooth.
  3. Transfer the date and peanut butter mixture into a mixing bowl. Add in the old-fashioned rolled oats and stir until everything is well incorporated.
  4. Line your 9x9-inch baking dish with parchment paper, allowing some overhang on the sides.
  5. Using a spatula, spread the mixture evenly into the lined baking dish. Press it down firmly to ensure it holds together when cut.
  6. Place the baking dish in the refrigerator for at least one hour to allow the bars to set.
  7. Once set, remove the bars from the baking dish using the parchment paper overhang. Cut into squares or rectangles.

Notes

  • Store bars in an airtight container in the fridge for up to one week.
  • For longer storage, freeze individual bars wrapped in parchment paper.
  • Consider adding chocolate chips or spices for extra flavor.
