  • 1 large lime Juice of
  • 1 tbsp light brown sugar
  • 3 tbsp soy sauce
  • 2 tbsp Sriracha hot sauce
  • 2 teaspoons fresh grated ginger
  • 2 tbsp sesame oil divided
  • 1 tbsp unsalted butter
  • 1/2 tsp crushed red pepper flakes optional
  • 2 large eggs lightly beaten
  • 1/2 lb. medium shrimp peeled
  • 2 cups frozen broccoli florets not thawed
  • 1 cup frozen red bell pepper strips not thawed
  • 4 cloves garlic minced
  • Salt to taste

Method
 

Cooking Steps:
  1. Start by boiling a large pot of water. Once boiling, add the lo mein noodles and cook according to package instructions until al dente. Drain and set aside, tossing with a teaspoon of sesame oil to prevent sticking.
  2. In a small bowl, whisk together the lime juice, light brown sugar, soy sauce, Sriracha, and grated ginger. Set this flavorful sauce aside for later.
  3. In a large skillet or wok, heat 2 tablespoons of sesame oil over medium heat. Once hot, add the minced garlic and crushed red pepper flakes, stirring for about 30 seconds until fragrant.
  4. Add the lightly beaten eggs to the skillet. Scramble them gently until just set, then transfer to a plate and set aside.
  5. In the same skillet, add the shrimp and cook for about 2-3 minutes, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  6. Next, add the frozen broccoli florets and red bell pepper strips directly to the skillet. Sauté for about 5 minutes, stirring occasionally, until the vegetables are heated through and tender.
  7. Return the shrimp and the scrambled eggs to the skillet. Pour the prepared sauce over everything and toss to combine, ensuring all ingredients are coated.
  8. Finally, add the cooked lo mein noodles to the skillet. Toss everything together to combine, ensuring the noodles are evenly coated in the sauce and heated through. Taste and adjust seasoning with salt if needed.
  9. Serve your 20-Minute Shrimp and Broccoli Lo Mein hot, garnished with extra lime wedges or a sprinkle of sesame seeds if desired. Dig in and enjoy the vibrant flavors and textures!
