Ingredients
  

For the Noodles:
  • 1 package ramen noodles (discard the flavor packet)
  • 1 tablespoon coconut oil
  • 2 cloves garlic (minced)
  • ½ teaspoon freshly grated ginger
  • 1 tablespoon brown sugar
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili garlic paste
  • 2 tablespoons toasted sesame oil
  • Toasted sesame seeds (for sprinkling)

Method
 

Instructions
  1. Step 1: Boil the Noodles. In a medium saucepan, bring water to a boil. Add the ramen noodles and cook according to package directions, usually about 3-5 minutes. Once cooked, drain and set aside.
  2. Step 2: Sauté Aromatics. In a skillet, heat 1 tablespoon of coconut oil over medium heat. Once melted, add minced garlic and freshly grated ginger. Sauté for about 30 seconds, or until fragrant. Be careful not to burn the garlic!
  3. Step 3: Create the Sauce. Add the brown sugar, low sodium soy sauce, rice vinegar, and chili garlic paste to the skillet. Stir continuously until the sugar has dissolved and the sauce is well combined.
  4. Step 4: Combine Noodles and Sauce. Add the cooked ramen noodles to the skillet and toss them in the sauce until they are evenly coated. Drizzle in the toasted sesame oil and mix thoroughly.
  5. Step 5: Garnish and Serve. Transfer the noodles to a serving bowl and garnish with thinly sliced green onions and a sprinkle of toasted sesame seeds. Enjoy your delicious and quick meal!
