- Rinse the salmon fillets under cold water and pat them dry. Place them on a baking sheet lined with parchment paper, skin side down.
- In a mixing bowl, combine the chopped almonds, panko breadcrumbs, lemon zest, olive oil, salt, and pepper. Mix until well incorporated.
- Using a spatula, evenly spread the almond mixture over the salmon fillets, pressing gently.
- Place the baking sheet in the oven and bake for about 10-12 minutes, or until the salmon is cooked through and the topping is golden brown.
- Remove the salmon from the oven and let it rest for a minute. Serve with your favorite sides and enjoy!
