Method
 

Instructions
  1. Preheat your oven to 400°F (200°C). If you're using an air fryer, set it to the same temperature.
  2. Rinse the salmon fillets under cold water and pat them dry. Place them on a baking sheet lined with parchment paper, skin side down.
  3. In a mixing bowl, combine the chopped almonds, panko breadcrumbs, lemon zest, olive oil, salt, and pepper. Mix until well incorporated.
  4. Using a spatula, evenly spread the almond mixture over the salmon fillets, pressing gently.
  5. Place the baking sheet in the oven and bake for about 10-12 minutes, or until the salmon is cooked through and the topping is golden brown.
